The Short menu is for the evening when you want the room but not the full two hours. It is the same kitchen and the same season, edited down to four courses that still carry you from savoury to sweet.
Cutting two courses is harder than adding them. We keep the savoury opener, because the menu does not make sense without it, one fruit course, the frozen palate-reset, and one of the sweet finishers. No petits fours on the Short menu, but coffee if you want to sit on.
It suits an early sitting, a weeknight, or a first visit when you are not sure yet whether dessert as a whole meal is your thing. Plenty of people come back for the Signature once they are.
